Salads Cookbook
IS there a formula to figure out how much potato salad to make for 100 people?
I can’t find any figures on this in my cookbooks. I also have to make enough Roman noodle salad for that many and barbequed meat balls too. This is for the middle of August. I have the potato salad recipe, roman noodle salad recipe and the meat ball one I want to do so I don’t need recipes just the formula to estimate how much people generally eat of this type of thing.
Here is a site that has quantities for 100 people — look under cold buffet for the potato salad quantity. Another way to do it is to take a look at a quantity recipe to see how much of the main ingredient it uses (for example, the recipe for potato salad on this site uses 30 lbs. potatoes) and then gauge your own recipe to fit that amount. http://www.razzledazzlerecipes.com/quantity/index.htm
